Malabe suco is located around 100km from the capital Dili, in the municipality of Ermera. Timor-Leste is the world's youngest country, and with its oil reserves becoming depleted, it's looking towards agriculture and coffee production as an important economic pillar. Raw Material, the importer of this coffee, has focused on working in Ermera, which produces the largest coffee volumes in Timor Leste. Raw Material started sourcing in Ermera in 2018, first building a community wet mill at Atsabe for processing the cherry of the producers they work with. Now in the third year of working in Ermera, and with every harvest, cup scores are on the rise; meaning producers earn more for their crop. All coffee produced in Malabe grows in the forests, making it shade grown and organic by default. Cherries are dried naturally on a combination of Colombia, African and Timor style beds across a number of weeks. This is our second year buying coffee from the Atsabe wet mill, and this natural from Malabe suco certainly breaks expectations of coffees from South East Asia. Dark stone fruit overwhelms the aroma, with delicate elderflower joining on the fragrance. Plum and cherry provide a bold acidity and delicate sweetness. As the cup cools, lychee brings further vibrancy. Toffee balances the cup, giving a heavy, syrupy body. Floral notes linger on the palate.
