Toaster or Grill, Pot of boiling water
Fill your saucepan with just enough water to cover your eggs and bring it to the boil.
Place your pre-poached eggs gently in the water using a slotted spoon and leave submerged for 90 seconds
Pop the avocado on your toast ready for those eggs!
Remove your eggs onto a paper towel to drain excess water, season, plate and serve with the slow-roasted tomatoes and a crack of black pepper... or smoked paprika and red pepper if you'd like a little spice.
