Producer Ivan Ovalle owns Finca El Peñón, a 75ha farm which lies in the town of La Democracia, Huehuetenango. Ivan is dedicated to protecting the environment from any adverse effects of coffee farming; 15ha of the farm is devoted to forest reserves and Ivan has reduced water usage and wastage by utilising his engineering degree. He also applies this dedication to producing high-quality coffees on his farm. He provides meticulous training to his pickers on which cherries to pick with each pass, based on his analysis of sugar content within the fruit. Finca El Peñón is planted with Bourbon, Caturra and Pache, all varieties known to produce very good quality at the higher altitudes at which Finca El Peñón lies. After being pulped, the coffee is dried on patios for up to 12 days. Ivan dries in direct sunlight to remove moisture as quickly as possible to help prevent any drying defects.
This was a coffee we knew we had to get in as soon as we cupped the sample; full of juicy sweetness, clean and floral. On the nose, stone fruits are prominent, with a subtle cocoa note in the background. The first sip is full of mango, peach and apricot, providing that juicy sweetness. These elements combine to bring a syrupy mouthfeel. Red apple brings a crisp malic acidity to balance the cup as it cools. The cup finishes with an almond note, paired with a floral element.
