Bale Mountain farm sits in the Arsi-Bale Mountain belt, which form the south eastern Ethiopian highlands. The farm is planted between 1800-2200masl and is protected by tree shades, which have a high role in water conservation and soil enrichment. The farm is surrounded by two big rivers, which wind through the highlands, providing the washing station on site with a water source. The owner, Israel, is heavily involved in the local community; helping build schools, seedling nursery establishments for farmers and financial support. Washed processed coffees are floated hand sorted before undergoing 48-60hr fermentation. Parchment is dried on African raised beds for 15 days, being exposed to the sunlight twice a day and covered during the night and hottest part of the day. All the milling and processing is done on site. A pleasing aroma of citrus and stone fruit rises from the grinds, with deep floral notes following. In the cup, peach brings a delicate acidity and sweetness. This is balanced by the vibrant acidity of lemon and lime. As the cup cools, tropical notes of pineapple push the acidity further, creating a mouth-watering sensation. The cup finishes with long, floral note of jasmine and honeysuckle, lingering in the mouth. This coffee makes for a tasty filter!
