The Ureña family is a well-known family in the town of Palmichal and are some of the premier coffee growers in the area. The 10 hectare farm is currently managed by Paúl Cascante Ureña, who took over management from family members after finishing his agronomy degree. His education has allowed him to drive the farm's quality forward, choosing optimal varieties and mixing his own unique fertiliser. Cherry is delivered to the Palmichal mill, a 10-minute drive from the Los Ureña farm, which runs a microlot program for farmers with promising terroir and a passion for producing specialty coffee. The mill has allowed local producers to dip into specialty coffee production after installing a micromill four years ago, and employing its own team of agronomists. This honey processed lot was pulped and slightly washed, keeping most of the mucilage intact, before drying on raised beds for 7-10 days.
This lot from Los Ureña is extremely moreish! The grounds exude a fragrance of almond and peach kernel, reminiscent of Disaronno and marzipan. As water is added, the aroma evolves into that of stone fruit, think apricot and peach. This follows into the cup, bringing a delicate acidity and a jammy sweetness. The cup is finished by a lingering floral orange blossom note, that stays on the palate long after the coffee is gone.
