This decaf lot from La Plata, Huila in Colombia is a community lot grown by 50 producers who are members of the Belen Coffee Association. Caravela Coffee, who sourced this lot, works with producers in the region to increase the value of their crop and maintain consistency across the regional blends they create. The cherry is naturally fermented in cement tanks for 12-24 hours, before being washed and sun-dried. The coffee is then decaffeinated using the Ethyl Acetate process. This is where the green coffee is exposed to water before being washed with Ethyl Acetate, a product derived from the fermentation of sugar-cane. The Ethyl Acetate removes the caffeine. The process is chemical free and leaves only 0.1-0.3% caffeine behind. Other decaffeination processes often remove a large percentage of flavour compounds, but the Ethyl Acetate process retains these. Plum and cherry are prominent on the nose. These follow into the cup, providing a subtle acidity and delicate sweetness. Green apple provides a tart acidity which is balanced by the bold sweetness of toffee. A malty biscuit note finishes the cup.
